Understanding the manner in which FDA and USDA regulate ingredients, and the specific requirements and formats for ingredient statement food labeling dictated by these agencies can be tricky. In this short course, we describe how FDA designates substances as food additives, color additives, and substances generally recognized as safe, or GRAS. This course will also demystify the requirements and formats required for FDA and USDA ingredient labeling, including rules specific to food additive function and category use, and additional labeling requirements triggered by certain ingredients.
